Dying for something sweet and chocolatey without any guilt? Have I got the treat for you! I came across this recipe on a parenting board I frequent ages ago, and then never got around to trying it. Saw it again today and decided to substitute the cocoa powder with carob and see how it would turn out. Oh. Yum. Without further ado…
Ingredients:
1/4 cup coconut oil, liquified if necessary
1 heaping teaspoon toasted carob or cocoa powder
1 t xylitol, adjust to taste
1/4 cup unsweetened shredded coconut
Instructions:
- Mix coconut oil and carob or cocoa powder till smooth and creamy. Add sweetener.
- Add enough shredded coconut to absorb all the carob mixture. I think I used about 1/4 cup, maybe less.
- Stick in freezer on small dessert plate for about 10 minutes to allow it to set.
- Cut, hide from family members so you don’t have to share, and eat slowly with eyes closed.
Optional: Trying mixing a little coconut milk in to make Chocolate Coconut Crack… Yum!!! Some people like adding peanut butter or in our house it would be Barney Almond Butter… mmmmmm
Added benefit: Both coconut oil and xylitol are very good at killing yeastie beasties, so this is perfect if you are prone to yeast infections.
