Greek Salad with Homemade Dressing Recipe

Anytime I am invited to a friend’s place for a potluck dinner lately this is what I bring. It’s a huge hit, and now I share my secret recipe with you! We made this for our camping trip and ate it with marinated kabobs grilled over a campfire. Delicious!

Salad Ingredients:

1 block Goat feta, diced
1/2 red onion, sliced in thin rounds
1 small package whole cherry tomatoes or grape tomatoes (keeps in salad better than sliced tomato)
1 large cucumber with peel, diced
1 package mini bell peppers, de-seeded & diced
1 package feta-stuffed green olives (or your choice of olives, I get these from our deli and they are AMAZING!)

Dressing Ingredients:

0.5 T garlic powder
0.5 T dried oregano (or 1 T fresh)
0.5 T basil (or 1 T fresh)
0.5 t pepper
0.5 t salt
0.5 T onion powder
0.5 T dry mustard powder (or 1 T fresh dijon)
1.5 T olive oil
3 T red wine vinegar

Instructions:

  1. Combine all dressing ingredients and whisk till smooth. Set aside.
  2. Combine all salad ingredients, drizzle homemade dressing over salad, toss gently.
  3. Refrigerate overnight. (You can eat it right away too, but it’s much better if it has a chance to marinate.)
  4. Serve & enjoy!
