Baked Chili Cod Recipe

There is a local fisherman who flash freezes freshly caught cod on his boat (to keep them fresh as they are so far out from land), and then comes around to businesses with a cooler full to sell them directly. I buy a large freezer bag full for just $20 every time, and they are totally worth every cent. They have a very mild flavour and a nice flaky consistency when baked or fried. You can’t get fresh fish like this on the prairies!

Ingredients:

1 T chili powder
2 t xylitol sweetener (or stevia)
1/2 t salt
1/2 t pepper
2-3 T coconut oil
300 grams frozen cod, skinned, de-boned & filleted
1 large bag fresh baby spinach

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit
  2. Mix spices and sweetener together
  3. Spread coconut oil on the bottom of a large baking sheet.
  4. Sprinkle half the spice mix on the coconut oil on the baking sheet.
  5. Lay the frozen fish out on the oil and spices, not overlapping
  6. Sprinkle the rest of the spice mix on top of the fish fillets
  7. Bake at 400 for 20 minutes (less if your fish is not frozen), or until it flakes easily with a fork (I always check after 10 minutes)
  8. Immediately remove the fish from the liquid in the pan, place on a plate, not overlapping
  9. Take a couple tablespoons of the liquid from the bottom of the pan, heat in a wok, and saute spinach in the juices briefly, just till slightly wilted, drain liquid from spinach, put on a plate, and serve cod over spinach. Enjoy!
