Easy Seedy Soda Bread Recipe

I developed the recipe while doing a five-month healing cleanse a few years ago because I missed bread but couldn’t eat yeast or wheat, and it could be made dairy-free (although this version is not). This soda bread comes out like a huge biscuit. It slices fairly well, but is a bit crumbly around the edges. There are tons of variations you can use with the following ratios. I have a nut free home, but I bet it would work great with almond flour too (if you try other flours, please leave a comment below with your results). I made it with kamut flour while on my cleanse because it’s an ancient grain and easier to digest than modern wheat flour. 

Organic Ingredients:

3 cups gluten free flour
2 T ground flax seeds
2 T raw sunflower seeds
2 T raw sesame seeds
4 t baking powder
1 t salt
1.5 cups liquid
1/4 cup liquid fat
seasonings/cheese to taste (optional)

Instructions:

  1. Pre-heat oven to 400 degrees Fahrenheit
  2. Mix dry ingredients (I added red pepper flakes and oregano to the one pictured)
  3. Mix wet ingredients in another bowl (I added 1/2 cup cream, 1 cup water, 1/4 cup melted coconut oil)
  4. Combine dry and wet ingredients. Stir gently until there is no more dry flour, but don’t overwork it. It should be lumpy.
  5. Rub coconut oil on the bottom of a baking sheet with edges with your (clean!) hands, then rub excess oil all over hands.
  6. Use oiled hands to form dough into a ball shape. Place on oiled baking sheet.
  7. Drizzle more melted coconut oil over the top of the loaf and sprinkle lightly with coarse salt. I also pressed grated cheese onto the top.
  8. Bake for 20 minutes, check, turn pan around, bake another 10-20 minutes until loaf is lightly browned on the top.

Variations:

  • Savory – add fresh herbs, feta, cheddar, green onion, dried herbs
  • Sweet – added finely diced fruit, replace liquid with juice, seasonings like cinnamon, nutmeg, cloves, etc…
  • Tomato – replace liquid with tomato soup, add sundried tomatoes and feta
