Chocolate Delight Fudge Recipe

I’m not a big fan of dark chocolate, so I’ve done probably 6 different batches trying to find the combo that tastes closest to milk chocolate. Today I finally hit on the right ratios! The key is to whisk the mixture as you heat it... This one does not come out rock hard like regular chocolate delight, it has a texture closer to fudge. 

Makes 12 pieces

Ingredients:

1/2 cup coconut oil
1/4 cup unsweetened coconut milk beverage
1/4 cup cocoa powder
1/4 cup xylitol
1/2 t vanilla extract
pinch of salt

Instructions:

  1. Combine all ingredients in a small sauce pan and heat on low till coconut oil is melted and xylitol is dissolved.
  2. Whisk briskly till all ingredients are well blended and the mixture is creamy, then remove from heat when it starts steaming (do not boil!).
  3. Pour into a greased baking pan. Let set in the freezer overnight.
  4. Slice into pieces and enjoy!
  5. Keep fudge covered and chilled or frozen (depending on texture you want).

Other variations that have been suggested to vary the flavor (obviously not all at once): cacao nibs, coconut flakes, cinnamon, peppermint extract, almond extract, sunflower seed or pumpkin seed butter, instant ground coffee, cayenne (add your ideas to the comments below!)
