Makes 4 servings
Baked Chicken Ingredients:
500 grams chicken tenders (in strips)
1/4 cup olive oil
1/4 cup lemon juice
2 T crushed fresh garlic
1 t Himalayan salt
Greek Salad Ingredients:
10-12 cherry tomatoes, leave whole
1/2 green pepper, cubed bite size
1 cucumber with skin, cubed bite size
1/2 red onion, thinly sliced in strips
1 package feta cheese, crumbled (use a vegan feta to make dairy-free)
2-4 T MCT oil
2-4 T apple cider or balsamic vinegar
Salt & pepper to taste
Instructions:
- Marinate chicken in a large freezer bag with oil, lemon juice, salt & garlic overnight
- Pre-heat oven to 375 degrees Fahrenheit
- Lay chicken out in an 8×8 glass baking dish, bake 15 minutes, flip, put back in oven for another 10 minutes or until baked through.
- While chicken is baking mix greek salad ingredients in a large bowl.
- After chicken has cooled, dice into bite size pieces and add to Greek salad. Toss lightly.
