Makes 6 servings
Ingredients:
2 lbs chicken tenders
2 T olive oil or MCT oil
1/4 cup red wine vinegar or ACV
2 T crushed fresh garlic
1 T oregano (dried or fresh chopped)
1 T basil (dried or fresh chopped)
1 t Himilayan salt
1 t fresh crushed pepper
1 T Frank’s Red Hot Sauce (optional)
Instructions:
- Preheat oven to 375 degrees Fahrenheit.
- Mix oil, vinegar, garlic and spices in the bottom of a large glass baking pan.
- Cover each side of each piece of chicken in spice mix and arrange in pan.
- Bake uncovered for 10 minutes, remove pan from oven, flip each piece over. Drizzle top with more oil.
- Return to oven and bake uncovered another 10-15 minutes till chicken is cooked through.
- Chill, cut into bite size pieces and add to Greek salad. Also delicious served hot with basmati rice and Greek salad.
