Baked Greek Chicken Tenders Recipe

Makes 6 servings

Ingredients:

2 lbs chicken tenders
2 T olive oil or MCT oil
1/4 cup red wine vinegar or ACV
2 T crushed fresh garlic
1 T oregano (dried or fresh chopped)
1 T basil (dried or fresh chopped)
1 t Himilayan salt
1 t fresh crushed pepper
1 T Frank’s Red Hot Sauce (optional)

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix oil, vinegar, garlic and spices in the bottom of a large glass baking pan.
  3. Cover each side of each piece of chicken in spice mix and arrange in pan.
  4. Bake uncovered for 10 minutes, remove pan from oven, flip each piece over. Drizzle top with more oil.
  5. Return to oven and bake uncovered another 10-15 minutes till chicken is cooked through.
  6. Chill, cut into bite size pieces and add to Greek salad. Also delicious served hot with basmati rice and Greek salad.
