Christmas is right around the corner and I’m getting ready for a Christmas potluck with some friends. I’m a huge fan of Hilah Cooking on Youtube and when I saw her version of this recipe I knew I had a winner. This gluten-free, dairy-free, nut-free recipe was inspired by her Bourbon or Rum Balls recipe.
Makes 20-24
Ingredients:
3 cups ground gluten-free cookies (I used 1 bag of Pamela’s chocolate chip cookies & 1 bag extreme chocolate cookies)
1 cup ground raw hulled sunflower seeds
1 cup sifted powdered sugar
1/2 cup Brandy (or whatever other booze you want… Kahlua or Baileys would be awesome too)
shredded coconut & more sifted powdered sugar
Instructions:
- Grind sunflower seeds in food processor.
- Add cookies and grind those up too.
- Add sugar and Brandy, mix till everything is smooth and combined.
- Prepare a bowl with enough shredded coconut and powdered sugar to cover about 20 balls
- Roll cookie mixture into balls (I used a tablespoon), then roll around in coconut sugar to coat.
- Refrigerate as long as you possibly can to let them “age” and get super boozy.
- Enjoy!
