Apple Crisp Recipe

We had an unseasonably hot and dry summer and as a result, a very good apple season. Our neighbour has an old apple tree that hangs over into our yard and he encourages us to pick whatever is on our side. We have a lot of apples right now so I whipped up this treat for the hubs while he’s at work today, it’s his favourite dessert. 

Ingredients:

3-4 large cooking apples
0.25 cup gluten free flour of your choice
0.5 cup gluten free rolled oats
0.25 cup solid coconut oil (refrigerate to harden if necessary)
0.5 cup granulated sugar
0.5 brown sugar
2 t ground cinnamon
2 t ground nutmeg
Pinch of salt

Instructions:

  1. Peel and slice apples to bite size pieces. Lay in bottom of an 8×8 casserole dish.
  2. In a mixing bowl combine both sugars, both spices and salt. Sprinkle 0.5 cup of sugar mixture over apples and stir gently to cover apple pieces.
  3. Add oats, flour and coconut oil to remaining sugar and spice mixture. Mix with a fork or pastry cutter till the hard oil is about pea size pieces.
  4. Cover apples evenly with oat mixture.
  5. Bake for 30-40 minutes till apples are soft and top is lightly browned.
  6. Serve with a scoop of dairy free vanilla ice cream (we prefer So Delicious made with coconut milk).
  7. Enjoy!
