Crust Ingredients:
2 cups shredded cauliflower
2 cups grated cheddar cheese
2 eggs
1 t each of dried basil & oregano
1 t fresh crushed garlic
Salt and pepper
Pinch of dried red pepper flakes (optional)
Pizza toppings of your choice: tomato sauce, pesto, pepperoni, bacon, prawns, feta, bell pepper, red onion, mushroom, fresh basil, mozza cheese, cheddar cheese, etc…
Instructions:
- Preheat the oven to 350 degrees Fahrenheit.
- Combine all ingredients in a mixing bowl.
- Line a baking sheet with parchment paper (don’t use foil, it stuck badly!).
- Dump the mixture on the paper and spread out into a thin circular shape with the back of a fork.
- Bake for 20 minutes till lightly browned.
- Let cool and peel off parchment paper.
- Top the crust with pizza toppings of your choice.
- Broil for 3-4 minutes till cheese is melted.
- Slice & serve hot (or refrigerate and eat chilled the next day, my personal preference).
