Jalapeño Poppers Recipe

1 popper = 2 net carbs (please calculate your own stats using the recipe ingredients as different food brands can vary.)

Ingredients:

10 jalapeños
70 g cream cheese
40 g shredded parmesan
40 g shredded cheddar
disposable latex gloves (important!)
10 slices bacon

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. Put the gloves on to protect against the jalapeño oils.
  3. Slice the jalapeños in half, leaving the ends on, and de-seed them.
  4. Mix the three cheeses in a bowl. Divide into 10 even portions.
  5. Fill one side of each jalapeño with the cheese mixture. Put the other side on top.
  6. Lay a piece of bacon out and roll it around the outside of the jalapeño. Lay on a cooking sheet. Once you’ve cleaned up all the jalapeño mess, you can take the gloves off and discard them.
  7. Bake for 30 minutes, turn the poppers over, bake another 20-30 minutes till bacon is crispy and browned.
  8. Remove from oven, set on paper towel to collect excess bacon fat.
  9. Enjoy!
