Parmesan Crusted Chicken Recipe

1 serving including caesar salad = 8 net carbs (please calculate your own stats using the recipe ingredients as different food brands can vary.)

Ingredients:

2 chicken breasts
1 egg, whisked with a fork
2 T coconut flour
40 g grated parmesan
1 t each of dried oregano & basil
pinch of salt & red pepper flakes

Salad ingredient suggestions: romaine lettuce, bacon, red onion, avocado, caesar dressing

Instructions:

  1. Whisk an egg in a bowl and set aside.
  2. Combine coconut flour, parmesan and spices in a different bowl. Spread out on a dinner plate or square casserole dish and set aside.
  3. Put chicken breasts in a freezer bag or between two pieces of saran wrap. Use a meat tenderizer to pound flat so they bake evenly.
  4. Preheat the oven to 400 degrees F.
  5. Grease a baking sheet, or put a silicone baking sheet liner on it.
  6. Dip the chicken in the egg, then lay it in the dry parmesan mixture to coat both sides of the chicken, then put it on the baking sheet.
  7. Bake for 15-20 minutes on each side till cooked through and browned.
  8. Let set for 10-15 minutes before slicing so it retains the moisture.
  9. Serve over a salad. Enjoy!
