Ingredients:
2 chicken breasts
1 egg, whisked with a fork
2 T coconut flour
40 g grated parmesan
1 t each of dried oregano & basil
pinch of salt & red pepper flakes
Salad ingredient suggestions: romaine lettuce, bacon, red onion, avocado, caesar dressing
Instructions:
- Whisk an egg in a bowl and set aside.
- Combine coconut flour, parmesan and spices in a different bowl. Spread out on a dinner plate or square casserole dish and set aside.
- Put chicken breasts in a freezer bag or between two pieces of saran wrap. Use a meat tenderizer to pound flat so they bake evenly.
- Preheat the oven to 400 degrees F.
- Grease a baking sheet, or put a silicone baking sheet liner on it.
- Dip the chicken in the egg, then lay it in the dry parmesan mixture to coat both sides of the chicken, then put it on the baking sheet.
- Bake for 15-20 minutes on each side till cooked through and browned.
- Let set for 10-15 minutes before slicing so it retains the moisture.
- Serve over a salad. Enjoy!
