One of the best replacements for rice or mashed potatoes is cauliflower. It’s super easy to make and delicious… It can also be used in other recipes like cauliflower crust pizza.
1/2 cup cauliflower = 1 net carb (please calculate your own stats using the recipe ingredients as different food brands can vary.)
Ingredients:
1 large cauliflower, washed and broken into florets
butter
heavy whipping cream
Instructions:
- Boil the cauliflower in water till fork tender. Drain water.
- Put cauliflower, butter and cream (amounts will vary depending on amount of cauliflower, start with a dollop and a splash, then add a little more as needed till it’s the consistency you want) in a food processor and pulse till it has a rice texture.
- For a more mashed potato type texture cook the cauliflower a little longer till quite tender, then blend in food processor with butter and cream on high till smooth. Add 1 t crushed garlic & 1/2 t sea salt to cut the cauliflower flavour.
Note: Using a hand blender also works, but make sure there’s no harder stem pieces or they will fly all over your kitchen!!
