Cream Cheese Crepes Recipe


After making these a few times I’ve tweaked the recipe and my cooking technique a little… The batter has a bit thicker consistency and holds together much better. You could also make this savoury with cheese and herbs and use it to make soft tacos or a sandwich wrap. 

Makes 2 servings of 6 mini crepes (12 total)

1 serving of 6 crepes = 7 net carbs (please calculate your own stats using the recipe ingredients as different food brands can vary.)

Ingredients:

125 g cream cheese
3 eggs
1 T powdered xylitol sweetener
1 t vanilla extract
1 T coconut flour
1 T flax meal

Instructions:

  1. Blend all ingredients in a blender (I used my magic bullet).
  2. Heat bacon grease, coconut oil or butter in a frying pan over medium heat.
  3. Pour batter into pan, 4 small ones are easier to flip than 4 big ones, till lightly browned and cooked through, about a minute or two each side.
  4. Serve hot, top each serving with butter and sugar free maple syrup.
  5. Enjoy! (Leftovers reheat nicely the next day.)
