Taco Salad Recipe

Makes 4 servings

1 serving = 10 net carbs (please calculate your own stats using the recipe ingredients as different food brands can vary.)

Ingredients:

1 lb ground beef (local, anti-biotic & hormone free)
1 onion, diced
2 t garlic, crushed
1 T taco seasoning (starch & sugar free)
organic baby spinach or romaine lettuce
1 cup salsa (sugar free)
1 cup full fat organic sour cream
90 g organic medium cheddar cheese, grated
2 sliced avocado
4 thin slices of red onion

Instructions:

  1. Brown ground beef in a pan over medium high heat till cooked through, drain extra fat then add diced onions, garlic, and taco seasoning and cook till onion is tender and translucent.
  2. Fill a large bowl with spinach or romaine, then layer 1/4 of the warm taco meat, grated cheese, salsa, avocado, red onion and sour cream over the greens.
  3. Toss lightly and enjoy!
