Pizza Crust Recipe

The Fat Head pizza crust recipe was inspired by Cooky’s Creations, so I went back to their original recipe to see how it differed, and because I can no longer eat almonds, I decided to experiment with raw sunflower seed meal.

Ingredients:

1.5 cups shredded mozzarella cheese
2 T cream cheese
3/4 cup raw sunflower seed meal (ground fine in food processor)
1 egg
Instructions:

  • Preheat oven to 425 degrees.
  • Grind raw sunflower seeds in food processor till a fine meal consistency.
  • Put shredded cheese and cream cheese in a microwave-safe bowl and microwave for 1 minute. Remove, stir, then microwave for an additional 30 seconds.
  • Stir in egg & sunflower seed meal.
  • Reheat in microwave another 20 seconds, stir again. 
  • Spread “dough” thin on silicone mat on a cookie sheet. It should spread evenly with a fork and have a dough-like consistency. 
  • Bake for 8 minutes, check, pierce any bubbles with a fork.
  • Bake for another 12 minutes, until lightly browned on top.
  • Remove from oven and let cool slightly. Add a thin layer of pizza sauce and toppings. Bake just till cheese is melted and bubbly.
