Breakfast Bowl with Aioli Sauce Recipe

Makes 2 servings (~5 net carbs each)

Ingredients:

2 whole eggs
2 T butter
2 T heavy whipping cream
2 T red onion, diced
4 cherry tomatoes, diced
1 avocado, peeled and sliced
2 pieces crispy cooked bacon
0.25 cup shredded cheese of your choice
1 T fresh cilantro or basil (optional)
1 serving aioli
salt & pepper

Aioli Ingredients:

1 t garlic, crushed
0.25 cup mayonnaise
1 T olive oil
0.5 T fresh lemon juice
1 t hot sauce of your choice (optional)
pinch of salt

Instructions:

  1. Blend all aioli ingredients till well combined. Set aside.
  2. Cook bacon and prep veggies, cheese and herbs. Set aside.
  3. Whisk together eggs and heavy whipping cream in a bowl. Add salt and pepper to taste.
  4. Melt butter in a frying pan over medium heat. Pour egg mixture into hot buttery pan and scramble eggs to preferred doneness.
  5. Divide the hot scrambled eggs into 2 bowls, top with half the cheese on each and toss lightly, then layer both with half the bacon, onion, tomato, avocado, and drizzle aioli over the top. Garnish with fresh herbs and serve hot.
