Makes 8 servings
Ingredients:
1 kg ground spicy hot Italian sausage
4 slices chopped raw bacon
1 bunch kale
1 bunch beet greens (from 3-4 beets)
1 T garlic, crushed
1 onion, finely chopped
3 cups frozen broccoli florets
Salt and Pepper to taste
1 T Italian seasoning (or 1 t each of dried oregano, basil, marjoram, and thyme OR 1 T each of fresh chopped oregano, basil, marjoram, and thyme)

Instructions:
- Remove hard kale & beet stems, then wash and chop up greens into bite size pieces.
- Lightly brown spicy sausage in a large pan.
- Add bacon and cook till crispy and browned.
- Add chopped onion and garlic. Saute till onion is translucent.
- Add seasonings and chopped greens, then saute till greens are slightly wilted.
- Serve over cauliflower rice.
