Zuppa Toscana Greens Recipe

Makes 8 servings

Ingredients:

1 kg ground spicy hot Italian sausage
4 slices chopped raw bacon
1 bunch kale
1 bunch beet greens (from 3-4 beets)
1 T garlic, crushed
1 onion, finely chopped
3 cups frozen broccoli florets
Salt and Pepper to taste
1 T Italian seasoning (or 1 t each of dried oregano, basil, marjoram, and thyme OR 1 T each of fresh chopped oregano, basil, marjoram, and thyme)

Instructions:

  1. Remove hard kale & beet stems, then wash and chop up greens into bite size pieces.
  2. Lightly brown spicy sausage in a large pan.
  3. Add bacon and cook till crispy and browned.
  4. Add chopped onion and garlic. Saute till onion is translucent.
  5. Add seasonings and chopped greens, then saute till greens are slightly wilted.
  6. Serve over cauliflower rice.
