
Ingredients:
2 T butter
1 T olive oil
2 t garlic, minced
1 onion, diced
1 lb fresh spinach
2 stalk celery, diced
2 T GF flour
2 cup vegetable broth
1 cup heavy cream
1 t salt
0.5 t pepper
0.5 t nutmeg
0.25 t cayenne pepper
1 cup grated cheddar
0.5 cup grated parmesan
bacon bits
Instructions:
- Blend spinach, broth and cream in a food processor and set aside.
- Melt oil and butter in a medium size saucepan over medium high heat. Add onion & celery. Saute till onion is translucent and celery has softened.
- Add spices and gluten free flour. Saute briefly till lightly browned.
- Add spinach mixture to the pot and bring up to a boil.
- Lower heat and simmer, stirring constantly, till thickened. Remove from heat.
- Add grated cheeses and mix in till melted.
- Serve hot with bacon bits sprinkled on top.
