Cheesy Cream of Spinach Soup Recipe

Ingredients:

2 T butter
1 T olive oil
2 t garlic, minced
1 onion, diced
1 lb fresh spinach
2 stalk celery, diced
2 T GF flour
2 cup vegetable broth
1 cup heavy cream
1 t salt
0.5 t pepper
0.5 t nutmeg
0.25 t cayenne pepper
1 cup grated cheddar
0.5 cup grated parmesan
bacon bits

Instructions:

  1. Blend spinach, broth and cream in a food processor and set aside.
  2. Melt oil and butter in a medium size saucepan over medium high heat. Add onion & celery. Saute till onion is translucent and celery has softened.
  3. Add spices and gluten free flour. Saute briefly till lightly browned.
  4. Add spinach mixture to the pot and bring up to a boil.
  5. Lower heat and simmer, stirring constantly, till thickened. Remove from heat.
  6. Add grated cheeses and mix in till melted.
  7. Serve hot with bacon bits sprinkled on top.
