
Ingredients:
2 cups zucchini grated
2 egg beaten
1 cup chickpea flour
1 cup grated jalapeño monterey jack cheese
1 T Italian Seasoning
salt and pepper to taste
Sour Cream & chives for dipping
Instructions:
- Grate the zucchini.
- In a small bowl beat the eggs.
- In a medium sized bowl add the zucchini, eggs, flour, cheese, Italian seasoning, salt and pepper and combine.
- Heat deep fryer to 375 F. Drop the zucchini batter into the fryer with a small ice cream scooper for 4 min till browned and cooked through. Don’t crowd the patties.
- Serve hot as a side dish with sour cream and chives.
