Lentil Pepper Stew Recipe

There’s nothing quite like a big bowl of hot spicy lentil soup on a cold dark autumn or winter night. I make this often, it’s quick and easy to throw together, and wow! It’s pretty amazing…

Ingredients:

1 red onion, diced
2 t garlic, crushed
5 cups vegetable stock
1 cup dry red lentils, rinsed
3 potatoes, peeled and diced
1 bell pepper, diced
1 t cumin
1 t sage
ground red chili pepper to taste (the hot stuff)
Optional: 1 spicy Italian vegan sausage, cooked & diced

Instructions:

Throw all the ingredients (except the vegan sausage) in a crockpot in the morning before going to work and cook on high for 5 hours. Add cooked vegan sausage right before serving.
