


Adapted from my Grandma Jean Peter’s 1946 Purity Cookbook.
Ingredients:
1 & 3/4 cup all purpose flour (or gluten free baking flour)
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup Becel vegan butter (or 1/4 cup vegetable oil)
1/2 cup sugar (2/3 cup if you like it sweeter)
3 eggs
1 cup mashed banana (3-4 ripe bananas)
Instructions:
- Grease a loaf pan and preheat oven to 350 degrees Fahrenheit.
- In stand mixer, cream together margarine (or oil), adding sugar in gradually, then add one egg at a time and beat till light and fluffy. Add mashed bananas and mix.
- In a separate bowl mix together remaining dry ingredients: flour, baking powder, baking soda, and salt.
- Add dry ingredients, and mix till smooth, without over beating.
- Bake for 75-90 minutes, until a knife inserted in the centre comes out clean. Remove from baking pan immediately, and cool on a metal rack.
- Serve warm slices slathered in butter.
