There’s two things I still crave periodically on a primarily vegetarian diet: crispy bacon and fish. This recipe calls for crispy bacon bits, and the dressing has anchovies in it, but you could always make a non-fishy dressing and some crispy fried capers instead of the bacon. This recipe can also be a full dinner if you add a pan fried veggie patty on top.

Adjust amounts of ingredients to the number of people being served and your personal preference.
Ingredients:
- Kale pieces, clean and de-stemmed OR romaine lettuce
- Renee’s Mighty Caesar Salad Dressing OR vegan caesar dressing
- Parmesan Cheese, grated or shredded OR Daiya shredded cheese
- Crispy bacon bits OR crispy fried capers
- Croutons OR roasted pumpkin seeds
- Canned chickpeas, drained and rinsed
- Optional: pan fried veggie patty, sliced in fingers
Instructions:
Toss the kale and dressing together in a medium size bowl till kale is evenly coated in dressing. Add the rest of the ingredients (except the veggie patty), toss lightly, top with the veggie patty if you want. Enjoy!
