Spinach & Egg Crustless Quiche Recipe

This was so yummy and very filling. 

Makes 3 small pies.

Ingredients:

2 whole eggs
2/3 cup frozen shredded spinach
1 tsp basil pesto
Pinch of salt & pepper
3 Tbs feta, crumbled

Instructions:

  1. Pre-heat the oven to 400 degrees. Spray 3 muffin holes in a muffin tin with non-stick cooking spray.
  2. Whisk the three eggs in a medium size bowl.
  3. Add the frozen spinach, and break up any large chunks.
  4. Add the pesto, salt & pepper, and combine well.
  5. Spoon the mixture into the three muffin holes.
  6. Bake for 15 minutes till golden brown and egg is set. A knife inserted into the pie should come out clean.
  7. Serve hot with the feta crumbled on top.
