Oven Roasted Brussels Sprout Recipe

Serves 2 as a side dish

Ingredients:

1/2 lb raw Brussels sprouts
3 T coconut oil, melted
1/2 t Himalayan salt

Instructions:

  1. Pre-heat oven to 400 degrees Fahrenheit.
  2. Wash the brussels sprouts. Trim the stem and remove any discolored outer leaves. Cut in half. Arrange in a baking pan flat side up.
  3. Drizzle coconut oil over sprouts and sprinkle salt.
  4. Bake for 20 minutes, turn over and bake another 10 minutes. The insides should be tender and the outside starting to crisp and nicely browned. Serve hot as a side dish.
