Serves 2 as a side dish
Ingredients:
1/2 lb raw Brussels sprouts
3 T coconut oil, melted
1/2 t Himalayan salt
Instructions:
- Pre-heat oven to 400 degrees Fahrenheit.
- Wash the brussels sprouts. Trim the stem and remove any discolored outer leaves. Cut in half. Arrange in a baking pan flat side up.
- Drizzle coconut oil over sprouts and sprinkle salt.
- Bake for 20 minutes, turn over and bake another 10 minutes. The insides should be tender and the outside starting to crisp and nicely browned. Serve hot as a side dish.
