Makes 4-6 servings
Ingredients:
8 medium to large fresh eggs, whisked
1.5 cups half and half or heavy cream
1/2 cup feta, crumbled
1/2 cup cheddar, grated
10 oz frozen chopped spinach
3 stalks green onion, thinly sliced in rounds
1 medium bunch fresh basil, chopped roughly
1/4 cup sundried tomato
dash of cayenne
dash of salt
dash of pepper
Instructions:
- Preheat the oven to 400 degrees Fahrenheit.
- In a large bowl whisk the eggs and cream together. Set aside.
- In the bottom of a 11×7 glass cake pan layer frozen spinach, green onions, fresh basil, sundried tomato, & feta. Sprinkle cayenne, salt & pepper over veggies and feta cheese.
- Pour the egg & milk mixture evenly over the veggies and feta.
- Bake for 15 minutes.
- Remove casserole from the oven, sprinkle cheese on top. Turn oven down to 325 degrees Fahrenheit, and bake another 20-30 minutes till nicely browned and egg is firm when a knife is inserted in the centre.
- Serve hot.
