Spinach Feta Quiche Casserole Recipe

Makes 4-6 servings

Ingredients:

8 medium to large fresh eggs, whisked
1.5 cups half and half or heavy cream
1/2 cup feta, crumbled
1/2 cup cheddar, grated
10 oz frozen chopped spinach
3 stalks green onion, thinly sliced in rounds
1 medium bunch fresh basil, chopped roughly
1/4 cup sundried tomato
dash of cayenne
dash of salt
dash of pepper

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl whisk the eggs and cream together. Set aside.
  3. In the bottom of a 11×7 glass cake pan layer frozen spinach, green onions, fresh basil, sundried tomato, & feta. Sprinkle cayenne, salt & pepper over veggies and feta cheese.
  4. Pour the egg & milk mixture evenly over the veggies and feta.
  5. Bake for 15 minutes.
  6. Remove casserole from the oven, sprinkle cheese on top. Turn oven down to 325 degrees Fahrenheit, and bake another 20-30 minutes till nicely browned and egg is firm when a knife is inserted in the centre.
  7. Serve hot.
