I’ve been down with a nasty summer cold for the past few days and was craving warm comforting soup. This is my go-to soup because the spice creates a warming effect and clears out the sinuses! It’s also nice served when you’re feeling well.
Makes approximately 6 servings
Ingredients:
1 head cauliflower, shredded or chopped finely
1 red or yellow onion, diced
1 T garlic, crushed
2-4 T coconut oil
2 cups stock
2 T curry paste (adjust to taste, we like it SPICY!)
1/2 T xylitol sweetener (or honey, sugar, maple syrup)
1 T fish sauce
1 can coconut milk
2 T corn starch dissolved in 1/4 cup water
Instructions:
- Melt coconut oil over medium/high heat in a large saucepan, add onion and garlic and saute till translucent. Add chopped cauliflower and heat thoroughly.
- Add stock and bring to a boil.
- While cauli mixture is coming to a boil, blend together coconut milk, curry paste, sweetener, and fish sauce. Add to cauliflower mixture.
- In a mug whisk together the corn starch and water, set aside.
- Just before the cauli mixture comes to a boil, add the corn starch water and stir constantly till soup is thickened and hot.
- Remove from heat, Serve hot.
- Leftovers are delicious reheated – freezes well. I’ve also added cubed chicken with delicious success.
