Curried Chickpea & Potatoes Recipe

We had this for dinner tonight and it was amazing! You have to try it…

Ingredients:

2 cans organic premium coconut milk (shake well before opening)
2 cans organic chickpeas (rinsed)
4 peeled diced organic potatoes
2 heaping T red curry paste
2 t vegan “fish” sauce
2 T organic honey or maple syrup
4-5 leaves of fresh basil
4-5 leaves of dried whole lime leaves

1 pot brown rice, cooked

Instructions:

1. Empty 1 can of coconut milk into a pan. Whisk red curry paste in till it’s smooth.

2. Add fish sauce and honey

3. Add potatoes. Heat on medium until bubbly. Turn down, let simmer till potato is cooked.

4. Add chickpeas, fresh basil, and lime leaves.

5. Slowly stir in 2nd can of coconut milk. Bring to a low simmer.

6. Serve over organic brown rice (we prefer Lundberg short grain)
