Super Easy Bean Tacos Recipe

This is a vegetarian dairy-free, egg-free, wheat-free, sugar-free, vinegar & citrus-free meal from when I did a 5-month candida cleanse a few years ago. If you don’t have these diet limitations you can add organic sour cream and salsa, and even a little grated cheese. We thoroughly enjoyed this simple quick meal without them though.

Ingredients:

6 hard taco shells
1 can Amy’s organic refried beans with chilies
1 diced tomato
1 avocado sliced

Instructions:

1. Put the beans in a bowl and put in the microwave for 2 minutes or till hot through.

2. Heat the taco shells at 350 degrees in the oven for 4-5 minutes.

3. Assemble 6 warm taco shells with a large spoon of refried beans, a few pieces of fresh tomato, and a slice or two of avocado. Salt and pepper to taste. Enjoy!
