Makes 8 burritos.
Ingredients:
2 cans refried pinto beans
grated monterey jack jalapeno cheese (or dairy free daiya shredded mozzarella)
8 large gluten free tortilla wraps
coconut oil
sour cream & salsa
Instructions:
- Heat the refried beans in a bowl in the microwave.
- Warm the tortillas to soften a little for easier folding. I usually just open the plastic bag and pop them in the microwave for 15-20 seconds.
- Place about 1/4 cup of warmed refried beans and a handful of grated cheese in the centre of each tortilla. Fold tortilla up from the bottom and wrap over beans & cheese, fold in the sides, and finally fold top down to make a burrito wrap.
- Heat a tablespoon or two of oil in a large pan over medium high heat. Pan-fry 2 burritos at a time until browned and crispy on both sides. Add more oil if necessary to finish pan-frying all the burritos.
- Top with sour cream & salsa, enjoy!
