Hot Chocolate Recipe

We try to eat whole foods as much as possible, which means we don’t buy a lot of prepackaged convenience foods, like hot chocolate mix. The weather has cooled off and it’s the perfect time of year to snuggle under a cozy blanket with good book and a steaming mug of hot chocolate, so I whipped up this vegan recipe for my dairy-allergic hubs and son.

Makes 2 mugs

Ingredients:

0.25 cup cocoa
0.25 cup raw sugar
1.25 cup unsweetened coconut milk beverage
1 cup water

Instructions:

  1. Measure cocoa, sugar, and 0.25 cup of coconut milk into a small pot. (Not a sell, but Epicure makes a lovely little stainless steel pot with a pour lip that works fantastic for this purpose. It even has measurements printed on the inside.)
  2. Whisk till smooth.
  3. Add remaining coconut milk and water, whisk again till smooth.
  4. Heat over medium-high heat till steaming, but not boiling.
  5. Pour into mugs and enjoy!

Optional: Add 1/8 t of cayenne for a hot bite, or a sprinkle of cinnamon and nutmeg on top for a fall treat, or top with mini marshmallows, or mix 50/50 with coffee for a cafe-mocha.

Quick Tip: Pre-mix a 1:1 ration of cocoa and sugar (ie, 1 cup cocoa to 1 cup raw sugar) and store in a mason jar with a lid. To make a single mug measure 0.25 cup of mix into a mug, use a fork to whisk smooth with a little water or coconut milk, fill half with water, half with coconut milk beverage, microwave for 1 minute on high, stir, and enjoy.
