I’ve been craving bread now that I’m eating vegetarian keto style, and found this recipe on the Wholesome Yum site. I’ve adapted it a little to fit my own style of cooking.
Makes 6 bagels.
Ingredients:
1.5 cup almond flour
1 tbsp baking powder
2.5 cup shredded mozzarella cheese
0.25 cup spreadable cream cheese
2 large beaten eggs

Instructions:
- Preheat the oven to 400 degrees F.
- Line a baking sheet with a silicone mat.
- Stir together the almond flour and baking powder. Set aside.
- Combine the shredded mozzarella and cubed cream cheese in a large bowl. Microwave for 1 minute, then stir. Microwave another minute, then stir until well incorporated.
- While the cheese mixture is still hot put it in a food processor bowl, then add the flour mixture. While it’s still hot knead the mixture in the food processor with a bread attachment until the dough is completely uniform and combined. If the dough becomes hard before fully mixed, or is too difficult to mix, microwave to reheat for 15-20 seconds.
- Divide the dough into 6 parts. Form into a long log with each part, then press the ends together to make a bagel shape on the lined baking sheet. Repeat with the remaining dough. Sprinkle everything bagel seasoning over the bagels and gently press it into the dough.
- Bake for 10-14 minutes, until the bagels are firm and golden.
- Store in fridge. Taste best toasted.
