Buddha Bowl Recipe

INGREDIENTS:

1 large zucchini and/or eggplant
1 large red onion and/or a large leek
1 large yam
olive oil
Italian seasoning
Red pepper flakes
Salt

2 cups vegetable broth
1 cup quinoa (or substitute brown rice or pasta)

1 can beans of your choice (chickpeas, pinto, black beans, romano, etc…)
balsamic vinegar

Mix & Match Fresh Toppings (pick 2-3): greens (kale, cabbage, brussel sprouts, spinach, lettuce), crumbled feta, avocado, sundried tomato in olive oil,  marinated artichoke hearts, fresh bell pepper, fresh cucumber, fresh herbs (basil, parsley, cilantro), dried fruit (dates, cranberries, raisins), kimchi, sauerkraut, roasted/raw nuts (pecans, cashews, almond slivers, macadamias) or roasted/raw seeds (pumpkin, sunflower, sesame, poppy, chia, flax).

INSTRUCTIONS:

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Slice yam into quarters, then into bite size chunks.
  3. Slice zucchini or eggplant in half, then into thin half moons.
  4. Slice onion in half, then into thin slices.
  5. Arrange veggies on two roasting pans, then drizzle olive oil, and sprinkle liberally with salt and italian seasoning. Add red pepper flakes to spicy taste preference. Mix to cover with oil and spices, then arrange so no veggies are overlapping.
  6. Roast in oven for 30 minutes, remove, flip veggies over, then return to oven, and check every 5 minutes until veggies are browned and crispy, but not burnt. Remove from oven and set aside.
  7. While veggies are roasted, prepare the quinoa. Rinse the quinoa, add to 2 cups of chicken broth, bring to a boil, then lower heat and simmer for 15 minutes. Remove from heat, fluff with a fork, then set aside.
  8. Open can of beans (chickpea or black beans) and drain under cold water in a sieve.
  9. In a large bowl mix together the quinoa, roasted veggies, beans, and drizzle with balsamic vinegar. Taste, and adjust spices and salt to personal taste.
  10. Optional: Enjoy cold or hot topped with your own mix of fresh ingredients. You can also replace the spices and vinegar with any other spices or dressings of your choice. Goddess dressing would also be delicious.
