Candied Yams Recipe

Makes 6 servings

Still bubbling hot out of the oven.


Ingredients
1 large yam
1/2 cup vegan Becel margarine (or coconut oil)
1/8 cup water
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground clove
1/4 tsp ground ginger
1 cup granulated sugar
1/2 cup brown sugar

Instructions

  1. Preheat the oven to 375 F.
  2. Wash the yam, peel, then slice into 1/2 inch rounds.
  3. Arrange the yam rounds in a 9×13 baking dish in a single layer.
  4. Melt the margarine in a medium size pot.
  5. Add white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove to the oil, mix till combined and sugar is melted.
  6. Pour the candied mixture over the yams, coating the yams, but leaving a little of the yam out of the liquid.
  7. Cover with foil and bake the yams in the oven for 30 minutes.
  8. Remove the foil and bake the yams for another 15-20 minutes until the sugar starts caramelizing on the top.
  9. Remove the yams from the oven, and let them sit for 5-10 minutes before serving.
  10. Enjoy!
