Makes 6 servings

Ingredients
1 large yam
1/2 cup vegan Becel margarine (or coconut oil)
1/8 cup water
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground clove
1/4 tsp ground ginger
1 cup granulated sugar
1/2 cup brown sugar
Instructions
- Preheat the oven to 375 F.
- Wash the yam, peel, then slice into 1/2 inch rounds.
- Arrange the yam rounds in a 9×13 baking dish in a single layer.
- Melt the margarine in a medium size pot.
- Add white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove to the oil, mix till combined and sugar is melted.
- Pour the candied mixture over the yams, coating the yams, but leaving a little of the yam out of the liquid.
- Cover with foil and bake the yams in the oven for 30 minutes.
- Remove the foil and bake the yams for another 15-20 minutes until the sugar starts caramelizing on the top.
- Remove the yams from the oven, and let them sit for 5-10 minutes before serving.
